Ingredients (serves 8)

  • 2 teaspoons salt
  • 2 tablespoons coconut ; grated
  • 3 teaspoons ginger ; minced
  • 4 teaspoons cilantro ; chopped, for garnish
  • 2 teaspoons turmeric
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 pounds chicken ; skinless, boneless breast, cut into pieces
  • 2 medium onions
  • 6 tomatoes ; peeled and chopped
  • 2 teaspoons chili powder
  • 4 teaspoons garam masala
  • 4 cloves garlic ; chopped

  • Directions

    Fry the onion with the garlic & ginger in the oil until it becomes translucent and brown. Add remaining ingredients except cilantro. Fry for a few minutes until chicken is completely coated in spices. Cover and simmer for 40-45 minutes. Add cilantro for garnish. Yields 4 servings.
