Ingredients (serves 8)

  • 2 teaspoons salt
  • 4 teaspoons chili powder
  • 2 teaspoons cumin ; ground
  • 2 onions ; sliced
  • 2 pounds chicken ; skinless boneless breasts
  • 4 teaspoons canola oil
  • 2 green bell pepper ; cut into strips
  • 2 red bell pepper ; cut into strips
  • 1/2 teaspoon cayenne pepper
  • 4 tablespoons lime juice
  • 1 cup salsa

  • Directions

     Prep: 10 min | Cook: 20 min | Ready in: 30 min
    1. Sprinkle seasonings over both sides of chicken.
    2. Heat oil in a large skillet over medium heat. Add onion and cook 3 minutes, stirring occasionally.
    3. Add bell pepper strips and cook 3 minutes, stirring occasionally.
    4. Push vegatables to edges of skillet and add chicken.
    5. Cook 5 minutes. Stir lime juice and salsa into vegetables.
    6. Continue to cook 4 minutes or until chicken is no longer pink in the center and vegetables are tender.
    7. Transfer chicken to serving plates and top with vegetable mixture.
    Origincal recipe makes 4 servings.

    good stuff.. Had this with some habanero hot sauce for some extra sassyness.

    Leave out the salsa, and try putting the chicken with the vegetables on a ciabatta roll with melted monterey jack cheese.....mmmmmmmmm
