Ingredients (serves 24)

  • 36 whole corn ; corn husked and cleaned
  • 18 large tomatoes ; diced
  • 6 large onions ; diced
  • 1 1/2 cups basil ; chopped fresh
  • 1 1/2 cups olive oil
  • 12 tablespoons white vinegar
  • salt ; to taste
  • black pepper ; to taste

     Prep: 10 min | Cook: 10 min | Ready in: 20 min
    Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes or until desired tenderness. Drain, cool, and cut kernals off the cob with a sharp knife.
    In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. Chill until serving.
