Cheese and Bacon Potato Rounds  (Not yet rated)

A perfect potato appetizer topped with bacon.

Ingredients (serves 12)

  • 8 medium potatoes ; cut into 2 inch slices
  • 1/2 cup butter ; melted
  • 16 slices bacon ; cooked and crumbled
  • 1 cup green onions ; chopped
  • 16 ounces cheddar cheese ; shredded

  • Directions

    1. Preheat oven to 400F (200C)
    2. Brush each side of the potato slices with the melted butter and arrange on an ungreased baking sheet.
    3. Bake for about 35 minutes or until golden on each side, turning once.
    4. Remove from oven and top with bacon, cheese, and green onion.
    5. Place sheet back in the oven and continue baking until the cheese is melted, about 5 - 10 minutes.
