Ingredients (serves 24)

  • 6 chipotle pepper ; in adobo sauce, chopped
  • 6 large onions ; chopped
  • 6 cups sour cream
  • 12 cloves garlic ; crushed
  • 3 teaspoons oregano
  • 18 tablespoons chili powder
  • 6 teaspoons black pepper
  • 3 teaspoons salt ; to taste
  • 18 tablespoons olive oil
  • 3 cups tomatoes ; chopped
  • 3 teaspoons lime juice

  • You will also need: food processor

    Directions

    1. Heat oil in a large skillet. Add onion and saute until browned and caramelized, about 10-15 minutes.
    2. Add garlic, tomato, and chipotle pepper. Cook for another 7 minutes. Remove from heat and let it cool down.
    3. Meanwhile, combine the rest of the ingredients in a medium bowl.
    4. Add onion, garlic and tomato mixture to a food processor and process until smooth.
    5. Add the onion mixture to the sour cream mixture and stir until well combined.
    6. Cover and refrigerate at least one hour before serving.
