Ingredients (serves 18)

  • 4 1/2 tablespoons canola oil
  • 2 1/4 cups onions ; cut into bite sized pieces
  • 2 1/4 cups green bell pepper ; cut into bite sized pieces
  • 67 1/2 ounces black beans ; 1 can, rinsed and well drained?
  • 2 1/4 cups bread crumbs
  • 9 cloves garlic ; peeled
  • 4 1/2 teaspoons chili powder
  • 4 1/2 teaspoons cumin
  • 4.5 egg(s)
  • black pepper ; to taste
  • salt ; to taste

    Directions

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a skillet over medium heat. Saute the green pepper and onion until soft,  about 10 minutes.
    2. Add the garlic, cooking for another 5.
    3. Let cool, and combine the cooked onion, green pepper and garlic in a food processor until finely minced.
    4. Combine bread crumbs, chili powder, cumin, salt and black pepper in a small bowl.
    5. Add the black beans to a large bowl and mash well with a fork.
    6. Add the bread crumb mixture, egg, and vegetable mixture. Combine completely.
    7. Form into 4 patties and grill on a preheated grill for 8 minutes per side.

    Held together well compared to other black bean burgers I've tried, and it tasted great! I made this on a George Foreman grill and it came out great. Cooking time was cut down since I didn't have to flip it.
