Directions
Prep: 10 min | Cook: 20 min | Ready in: 30 min
- Cook pasta according to package directions, usually around 8-10 minutes. Drain, reserving 1/2 cup of the pasta water. set the pasta aside, and
- Heat a large skillet over medium-high heat and cook the ground meat (chicken, beef or turkey will do) until no longer pink.
- Add the onion and garlic, cooking until fragrant.
- Add the taco seasoning, tomatoes. Simmer over medium heat for about 3-5 minutes.
- Stir in the reserved pasta water, sour cream, and cream cheese. Continue stirring until the cream cheese is melted and sauce is well blended.
- Season to taste with salt and pepper and simmer, reducing the sauce, for another 3-5 minutes.
- Stir in the pasta to coat with the sauce.
- Top with cilantro (optional) before serving.
