Ingredients (serves 8)

  • 0.5 parsley ; minced
  • 1/2 cup butter ; melted
  • 1 cup parmesan cheese ; grated
  • 40 crackers ; buttery (i.e. Ritz), crushed
  • 8 fillets catfish ; about 8 ounces each

    Combine cheese, parsley and crackers in a large shallow bowl. Dip fillets in butter and then in cracker mixture to coat. Lay fillets on an aluminum foil baking pan. Bake at 400 degress F for 15-20 minutes.
