Jicama, or yam bean, is a sweet, starchy edible root of a South American vine. Although it looks like a turnip, the two vegetables are not related. Jicama is popular in Mexican cuisine and has been cultivated in South America for hundreds of years.

The outer brown layer of the jicama should be removed to reveal the white interior before eating it raw. It's often part of salsa and salads, and is popular in soups and stir-fry dishes.
