Sorghum flour is flour milled from sorgum, a millet-like cereal grain. Sorghum flour is typically found in gluten-free flour baking mixes which include other gluten-free ingredients. By itself, sorghum flour gives baked goods a gritty, grainy texture. However, adding more oil, fat or eggs to the recipe can improve the texture and moisture. Ascorbic acid or apple cider vinegar can also improve the volume.
