Fontina is an Italian cheese made from cow's milk with a milk fat content of about 45%. Fontina production occurs traditionally in the Aosta Valley region in north-western Italy, although it is produced in other areas of Italy, in addition to Denmark, France and Sweden.
The original Italian fontina has an intense flavor and is quite pungent, but varieties made in other countries tend to be milder. The Danish version is often found in US grocery stores and can be distinguished from the Italian version by the red wax rind and softer texture. The Italian version has a natural, orange-brown rind due to longer aging.
