Ingredients (serves 9)

  • salt ; to taste
  • 1/3 cup basil ; chopped
  • 10 tomatoes ; plum, diced
  • 3 cloves garlic ; minced
  • 1 teaspoon lemon juice
  • black pepper ; to taste
  • 1/3 cup olive oil
  • Italian bread ; Or French bread, in 1 inch slices

  • You will also need: cookie sheet

    Directions

    Preheat oven to 425F. Mix all ingredients in a small bowl except the bread, and set aside. Brush one side of each bread slice with olive oil. Place the slices oil-side down on a cookie sheet. Toast in oven until golden brown. Top each bread slice with tomato and oil mixture and serve immediately.
