Ingredients (serves 8)

  • 2 cups carrots ; chopped
  • 1 head iceberg lettuce ; broken up
  • 6 cloves garlic ; chopped
  • 2 pounds chicken ; cut into bite sized pieces
  • 16 ounces feta cheese ; crumbled
  • 6 tablespoons olive oil
  • 4 green bell pepper ; chopped
  • 1 cup chickpeas
  • 2 cups Italian dressing ; or to taste

  • Directions

    Heat oil in a large skillet and saute the chicken until done. Allow chicken to cool, and then combine remaining ingredients into a large bowl. Add other vegetables if desired.

    adding roasted red peppers is a nice touch.

    This is pretty good. It's a light meal, so make something else with it if you are really hungry :)
