Beef brisket refers to an inexpensive, tough, yet flavorful cut of beef that is made tender through a long cooking process. This cut is taken from underneath the first five ribs, in the breast section. It is usually sold flat or in a point cut. The point cut is typically more flavorful but the flat cut is leaner.
