Use this heavy chocolate glaze to fill pastries or cover cakes
Ingredients (serves 24)
Combine the butter and cream in a large saucepan with high edges and heat over medium heat, until it just starts to boil. Remove it immediately from the heat and pour it over the chocolate.
Stir until the mixture is smooth and the chocolate is completely melted. Let it cool completely and store in the refrigerator. Reheat ganache as needed in a double-boiler over simmering water.
