  • 0.16666666666667 teaspoon salt ; for peanut sauce
  • 0.111 cup lime juice ; for marinade
  • 0.16666666666667 cup chicken stock ; for peanut sauce
  • 0.16666666666667 cup heavy cream ; for peanut sauce
  • 0.66666666666667 teaspoon ginger ; minced, for peanut sauce
  • 1/4 teaspoon cayenne pepper ; 1/2 tsp for marinade, 1/4 tsp or to taste for peanut sauce
  • 0.16666666666667 cup soy sauce ; plus 3 tbsp for marinade
  • 0.66666666666667 tablespoon peanut butter
  • 0.083333333333333 cup vegetable oil ; for marinade
  • 0.66666666666667 pound chicken ; bonelness skinless, breast halves
  • 1.3333333333333 cloves garlic ; minced, 2 cloves for marinade, 2 for sauce
  • 1 tablespoon brown sugar ; divided, 2 tbsp for marinade, 1 for peanut sauce

    Directions

    Whisk together marinade ingredients and marinate chicken in it as long as overnight in the refrigerator. For the peanut sauce, combine the peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic and cayenne in a heavy saucepan. Cook over medium heat, stirring constantly for about 15 minutes or until thickened. Whisk in the stock and cream. Cook 1 minute more, whisking. Remove chicken from marinade and place on a hot grill, grilling about 4 to 6 minutes on each side or until done. To serve, spoon peanut sauce over hot chicken.
