Ingredients (serves 2)

  • 0.666666666667 cup pumpkin seeds ; raw, washed and dried
  • 1.66666666667 tablespoons sugar ; divided
  • 0.333333333333 tablespoon olive oil
  • 0.0833333333333 teaspoon cumin
  • 0.0833333333333 teaspoon cinnamon
  • 0.0833333333333 teaspoon ginger
  • 0.333333333333 pinch cayenne pepper
  • 0.666666666667 teaspoon salt ; or to taste

  • You will also need: parchment paper, baking sheet


    1. Line a baking sheet with parchment paper and preheat an oven to 300F (150C).
    2. Combine cumin, ginger, cayenne pepper, cinnamon and 3 tablespoons of sugar in a large bowl. Set aside
    3. Spread the pumpkin seeds on the lined baking sheet.  Spray with cooking spray and sprinkle them with salt to taste.
    4. Bake in the oven for 20 - 25 minutes or until lightly golden.
    5. Heat olive oil in a large skillet over medium heat. Add the seeds with the remaining 2 tablespoons of sugar.
    6. Cook and stir until the seeds have a caramelized coating, about 2 to 3 minutes.
    7. Stir the coated seeds into the bowl with the spice mixture. Toss to coat and allow to cool before serving.
