Caribbean Style Chicken  

You can add some heat to this recipe by using hot chili sauce or adding hot peppers. Good for fajitas and tacos, also.

Ingredients (serves 8)

  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 2 pounds chicken
  • 1/2 cup lemon juice
  • 1 tablespoon Dijon mustard ; or plain yellow mustard
  • 1/4 cup chili sauce
  • In My Kitchen


  • You will also need: grill, baking dish

    Directions

    1. Combine lemon juice, chili sauce, mustard, basil and parsley.
    2. Mix. Pour over chicken pieces in a shallow baking dish.
    3. Let sit in refrigerator for at least 2 hours.
    4. Preheat grill.
    5. Drain chicken and discard marinade.
    6. Grill until done, about 25-30 minutes over a medium heat
