Ingredients (serves 4)

  • 1 cup carrots ; shredded
  • 2 tablespoons rice vinegar
  • cayenne pepper sauce ; a few drops
  • 6 ounces crab ; meat, flaked
  • 1 teaspoon ginger ; grated
  • 1 1/2 teaspoons soy sauce
  • 6 ounces fusilli ; or rotini
  • 1/2 cup peanuts ; dry-roasted
  • 2 tablespoons cilantro ; fresh
  • 3 ounces peas
  • 3 tablespoons canola oil
  • 1/2 cup green onions ; sliced

    Cook pasta according to package directions, and drain. In a large bowl, combine warm pasta, peas, crabmeat, cilantro and carrot. Make dressing by combining soy sauce, vinegar, oil and cayenne pepper sauce in a jar. Cover, and shake to mix. Drizzle over pasta mixture, tossing to coat. Salad can be served warm or chilled. Sprinkle with peanuts and serve.
