Satay Sauce  

A basic Malaysian Satay sauce. Serve with chicken pieces for dipping.

Ingredients (serves 12)

  • 1/2 medium onions ; grated
  • 2 teaspoons brown sugar
  • 1/2 cup peanut butter
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cayenne pepper
  • 10 fluid ounces coconut milk

  • You will also need: saucepan


    Combine all ingredients in a saucepan over medium heat. Bring to a boil, stirring frequently. Remove from heat and serve warm. Yields 1 1/2 cups or 12 servings.

    This was really heavy since coconut milk is high in fat, but very tasty. Next time I make this I'll try using low fat coconut milk and reduced fat peanut butter.
