Ingredients (serves 6840)

  • 684 whole avocados ; peeled, pitted and cut into 1 inch cubes
  • 2736 whole grapefruit ; pink, peeled
  • 1368 teaspoons vegetable oil
  • 6840 cups iceberg lettuce ; or mixed greens
  • 342 teaspoons black pepper
  • 342 teaspoons salt
  • 342 cups white vinegar
  • 4104 tablespoons honey

  • Directions

    Cut one of the grapefruit in half, and reserve the other half. Cut the rest of the grapefruit (half plus one whole) into segments. Squeeze juice of the reserved grapefruit half into a small bowl. Add honey, salt, pepper, vinegar and oil to the grapefruit juice, whisking constantly until blended. Place lettuce in a serving platter. Arrage the grapefruit segments and avocado over the lettuce, and drizzle with the grapefruit dressing.
