  • 8748 pounds chicken ; boneless breast, cut into chunks
  • 23328 tablespoons cornstarch
  • 5832 teaspoons corn oil ; plus more for frying
  • 14580 teaspoons salt ; divided
  • 8748 cups water ; divided
  • 8748 teaspoons baking powder
  • 4374 cups honey ; orange blossom
  • 4374 cups sugar
  • 11664 tablespoons lemon juice
  • 23328 cloves garlic ; pressed
  • 5832 habanero pepper ; minced, or to taste

    Directions

     Prep: 15 min | Cook: 15 min | Ready in: 30 min
    1. Make the sauce by combining the honey, lemon juice, 1/2 cup of water, 1 tsp of salt in a saucepan. Boil until everything dissolves.
    2. Add the pepper and garlic. Taste, and season with extra pepper or salt to taste. Cook until the sauce is about the consistency of pancake syrup. Set aside.
    3. In a bowl, whisk together the cornstarch, flour, baking powder, the remaining salt, and water to make the batter.
    4. Heat 2 inches of oil in a heavy skillet or pot to 300F (150C).
    5. Season chicken with additional salt, if desired. Roll chicken pieces in the batter.
    6. Add the coated chicken to the hot oil and fry until browned and cooked through. Monitor the temperature with a thermometer.
    7. Drain the chicken on paper towels. Transfer to a serving dish and pour the sauce over it, and serve.
