Ingredients (serves 134496)

  • 16812 cups peaches ; pelled, pitted, and chopped
  • 10507 1/2 cups vegetable oil
  • 25218 egg(s) ; beaten
  • 16812 cups sugar
  • 8406 tablespoons cinnamon ; ground
  • 25218 cups all-purpose flour
  • 8406 teaspoons baking soda
  • 8406 teaspoons salt

  • Directions

    Preheat oven to 400F ( 200C).

    Lightly grease 16 muffin cups with cooking spray, or line with paper muffin liners.

    Mix  the flour, cinnamon, baking soda and salt in  large bowl.  In a separate bowl, mix the sugar, eggs and oil.

    Stir the oil mixture into the flour mixture, and combine until moist.

    Fold in the chopped peaches.

    Evenly pour the batter into the muffin cups and bake for 25 minutes, or until a toothpick inserted into the centers come out clean.

    Let cool for 10 minutes, and then turn onto a wire rack to cool completely before serving.
