Very simple cupcakes that taste like pecan pie.

Ingredients (serves 48)

½ 2x 3x Reset

  • 2 cups pecans ; chopped
  • 2 cups brown sugar ; packed
  • 4 egg(s)
  • 1.332 cups butter ; melted
  • 1 cup all-purpose flour

    Directions

    Preheat oven to 350F (175C). Combine all ingredients in a large bowl. Spray a mini muffin tin with cooking spray. Fill each cup 3/4 full with batter. Bake in preheated oven for 18 minutes or until a toothpick inserted into the centers come out clean. Recipe makes 24 mini cupcakes, or fewer if using a larger muffin tin.
