Ingredients (serves 12)

  • 1 tablespoon sugar
  • salt ; enough to taste
  • 10 cloves garlic ; peeled
  • 8 jalapeno pepper ; seeded
  • 1/4 cup ginger ; fresh, peeled and lightly chopped
  • 1/4 cup lime juice

  • You will also need: food processor


    Combine all ingredients except the salt in a food processor or blender and puree, stop the machine to scrape down sides as needed. Taste and add salt as necessary. Serve or cover and refrigerate for about 2 weeks. Serve at room temp.
