Ingredients (serves 8)

  • 2 cups sugar
  • 1 teaspoon salt
  • 2 cups carrots ; grated
  • 1 egg(s)
  • 2 cups all-purpose flour
  • 1 cup vegetable oil
  • 1 cup walnuts ; ground
  • 1 teaspoon baking soda

  • Directions

    Mix together oil, sugar and eggs. Add flour, salt, baking soda, carrots, and ground walnuts. Bake for 45 minutes at 350 degrees. Frost with canned vanilla frosting or with cream cheese combined with sugar. Sprinkle top with additional crumbled up walnuts.
