Ingredients (serves 10)

  • 5 pounds potatoes ; peeled
  • salt ; to taste
  • 1/4 cup butter ; softened
  • 1/2 cup milk
  • 1/4 cup green onions ; chopped
  • black pepper
  • 6 tablespoons garlic ; or about 6 cloves, minced

     Prep: 25 min | Cook: 35 min | Ready in: 1 hr
    1. Slice peeled potatoes into quarters. Bring a large pot of water to a boil, and add a dash of salt.
    2. Boil potatoes until easily pierced with a fork, about 20-35 minutes. Drain potatoes, and return to the pot.
    3. Add garlic, milk and butter to the potatoes.
    4. Use a masher to combine everything together, until creamy.
    5. Add additional milk or butter if necessary to reach desired consistency.
    6. While mashing, add salt and pepper to taste. Garnish with chopped green onion. Serves 10.

    One variation is to saute the garlic in a few tablespoons of olive oil before adding it (along with the oil) to the potatoes.
