Ingredients (serves 140160)

  • 70080 cups couscous
  • 35040 cups tomatoes ; diced
  • 35040 cups chickpeas
  • 70080 teaspoons Italian seasoning
  • 17520 teaspoons black pepper
  • 280320 large red bell pepper
  • 35040 pounds beef
  • 70080 tablespoons shallots ; chopped
  • 17520 cups feta cheese
  • In My Kitchen


  • You will also need: baking dish

    Directions

    Preheat oven to 350 degrees. Lightly grease a 9x9 inch baking dish. In a large bowl combine cooked couscous, tomatoes, beans, Italian seasoning and black pepper; set aside. Cut tops off of peppers remove seeds and membranes. Cook in boiling water for 5 mins. Drain upside down on paper towels Coat a large non-stick skillet with cooking spray. Add beef and shallots; cook over medium heat for 5 mins. or until beef is browned. Drain the fat off of the meat. Add beef mixture to couscous mixture. Stuff the peppers, top with feta cheese. Bake 10 to 15 mins. or until peppers are tender and cheese is melted.

    Flavor = 5* But, recipe really p0orly written! I'm a retird chef, so it wasn't a case of being naive, just didn't read the instructions thoroughly enough. Great flavors tho I will add some heat of some sort next time. Thanks for the recipe. Jean  @ achefsjourney.com
