Ingredients (serves 1140)

  • salt ; to taste
  • 228 tablespoons curry powder ; powder
  • 228 onions ; finely chopped
  • 456 tablespoons lemon juice
  • black pepper ; to taste
  • 1368 tablespoons vegetable oil
  • 228 cups cottage cheese ; use low-fat if desired
  • 912 tablespoons tomato juice
  • 228 tablespoons wine vinegar
  • 456 teaspoons apricot jam

    Directions

     Prep: 15 min | Cook: 10 min | Ready in: 25 min
    1. Saute onion in 1 tbsp oil until soft but not brown.
    2. Add curry powder and stir for 2 minutes. Add tomato juice and vinegar.
    3. Simmer until reduced by half. Stir in jam, and then cool.
    4. Place mixture in food processor and blend until smooth.
    5. Blend in lemon juice and cottage cheese.
    6. Add remaining oil slowly, and season with salt and pepper to taste.
    Makes enough sauce to cover a little more than 1 lb of chicken pieces!
