Ingredients (serves 267300)

  • salt ; to taste
  • 53460 tablespoons curry powder ; powder
  • 53460 onions ; finely chopped
  • 106920 tablespoons lemon juice
  • black pepper ; to taste
  • 320760 tablespoons vegetable oil
  • 53460 cups cottage cheese ; use low-fat if desired
  • 213840 tablespoons tomato juice
  • 53460 tablespoons wine vinegar
  • 106920 teaspoons apricot jam

    Directions

     Prep: 15 min | Cook: 10 min | Ready in: 25 min
    1. Saute onion in 1 tbsp oil until soft but not brown.
    2. Add curry powder and stir for 2 minutes. Add tomato juice and vinegar.
    3. Simmer until reduced by half. Stir in jam, and then cool.
    4. Place mixture in food processor and blend until smooth.
    5. Blend in lemon juice and cottage cheese.
    6. Add remaining oil slowly, and season with salt and pepper to taste.
    Makes enough sauce to cover a little more than 1 lb of chicken pieces!
