White rice refers to milled rice that had its husk, germ and bran removed. Following a polishing, the rice has a bright white and shiny appearance. Although this process extends the shelf-life of the rice, it removes important nutrients such as fiber and thiamine. White rice is sometimes enriched with the nutrients that get removed during processing.
