Ingredients (serves 6)

  • 1 clove garlic ; crushed
  • 1/8 teaspoon black pepper
  • 3/4 cup feta cheese ; crumbled
  • 1/4 cup sour cream
  • 1/4 cup cream cheese
  • 8 ounces yogurt ; low fat
  • 1 tablespoon dill
  • 1 1/2 cups spinach ; finely chopped

  • You will also need: food processor


    1. Spoon yogurt onto several layers of paper towels. Cover with another layer of paper towels and let stand for 5 minutes.
    2. Scrape yogurt off of the paper towel with a rubber spatula into food processor.
    3. Add garlic, sour cream and cheeses, and process until smooth.
    4. Transfer mixture into a medium bowl and combine with spinach, pepper and dill. Cover and chill. Yields 2 cups.
