Ingredients (serves 4)

  • 20 ounces pineapples ; can of chunks, undrained
  • 1 pound chicken ; 4 boneless, skinless breasts
  • 3 tablespoons cilantro ; fresh, chopped
  • 1/2 medium green bell pepper ; chopped
  • 1/2 cup red bell pepper ; chopped
  • 4 cups brown rice ; cooked (2 cups uncooked)
  • 1/2 cup green onions ; sliced thinly

  • Directions

    1. Spray a large skillet with nonstick cooking spray. Brown chicken breasts on both sides, cooking until no longer pink inside, about 20 minutes, turning halfway through cooking.
    2. Combine remaining ingredients except cooked rice in a small bowl. Toss to mix.
    3. Place chicken on a bed of brown rice, and top with pineapple mixture.
    Original recipe serves 4.
