Prep: 15 min | Cook: 20 min | Ready in: 35 min
- Spray a large skillet with nonstick cooking spray. Brown chicken breasts on both sides, cooking until no longer pink inside, about 20 minutes, turning halfway through cooking.
- Combine remaining ingredients except cooked rice in a small bowl. Toss to mix.
- Place chicken on a bed of brown rice, and top with pineapple mixture.
