Ingredients (serves 8)

  • 8 ears corn ; husked
  • 1 whole cucumber ; peeled, chopped
  • 1 whole onions ; red, chopped
  • 1 whole red bell pepper ; chopped
  • 1/2 cup Italian dressing
  • 1 whole tomatoes
  • 1 whole zucchini ; chopped

  • Directions

    Cut the corn kernels off of the cobs. Combine the corn and remaining ingredients in a large bowl. Toss with the Italian dressing. Refrigerate for at least 1 hour, or until chilled before serving.
