Ingredients (serves 8)

  • 3 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 2 tablespoons canola oil
  • 1 tablespoon thyme
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 pounds chicken
  • 2 cups bread crumbs

  • You will also need: baking sheet


    Whisk maple syrup, mustard, 1 tablespoon of the oil, thyme, pepper and salt in a large bowl. Add chicken and generously coat. Cover and marinate of at least 30 mins.
    Preheat oven to 400 degrees. Set on wire rack or large baking sheet. Combine breadcrumbs with the remaining oil on a plate. Dredge the skinned side of the chicken breast in the breadcrumbs and arrange breaded side up on the wire rack or baking sheet.
    Bake until golden brown. :o)
