Ingredients (serves 6)

  • 2 pounds salmon ; fillets, with skin removed
  • 1 tablespoon ginger ; fresh, grated
  • 1/3 cup soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 1 teaspoon garlic ; minced
  • 1 teaspoon sesame oil
  • 1/3 cup vegetable oil
  • 1/4 cup green onions ; chopped

    Soak three, untreated 12-inch cedar planks in warm water for at least an hour.

    Meanwhile, combine the soy sauce, green onions, oils, rice vinegar, garlic and ginger in a shallow dish.

    Add the salmon, turning to coat. Cover and marinate in the refrigerator for at least 15 minutes; up to one hour.

    Heat a grill to medium heat. Place the cedar planks on the grill.   When they start to crackle and smoke a little, they are ready.

    Place the salmon fillets on the planks. Discard the marinade.

    Cover, and cook for about 20 minutes, or until fish flakes easily with a fork.
