Salmon refers to any of various large fishes of the genera Salmo and Oncorhynchus, of northern waters, having pinkish flesh and characteristically swimming from salt to fresh water to spawn.
We like to cook our salmon until the internal temperature reaches 130 F (55 C). Fully cooked salmon should be fairly opaque and flake easily with a fork.
