  • 6 onions
  • 6 cloves garlic ; chopped finely
  • 9 avocados ; large
  • 9 sprigs coriander
  • 24 tomatillos ; green
  • 18 serrano chile peppers ; chopped finely

    Remove the seed from the avocadoes and mash the flesh in a bowl. Grind or process the tomatillos with the salt, coriander and garlic. Combine the tomatillo mixture with the mashed avocado, chopped onion and chilies. Serves 12.
