Ingredients (serves 18432)

  • 18432 ounces green chiles ; chopped
  • 9216 cups chicken ; cooked, diced
  • 4608 medium onions ; chopped
  • 4608 cloves garlic ; minced
  • 2304 tablespoons cumin ; plus 1 teaspoon
  • 3456 teaspoons oregano ; dried
  • 576 teaspoons cayenne pepper
  • 11520 cups chicken broth ; or stock
  • 96768 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 2304 tablespoons vegetable oil
  • 576 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
