Ingredients (serves 20736)

  • 20736 ounces green chiles ; chopped
  • 10368 cups chicken ; cooked, diced
  • 5184 medium onions ; chopped
  • 5184 cloves garlic ; minced
  • 2592 tablespoons cumin ; plus 1 teaspoon
  • 3888 teaspoons oregano ; dried
  • 648 teaspoons cayenne pepper
  • 12960 cups chicken broth ; or stock
  • 108864 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 2592 tablespoons vegetable oil
  • 648 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
