  • 168156 cups chicken ; cooked, diced
  • 84078 medium onions ; chopped
  • 84078 cloves garlic ; minced
  • 42039 tablespoons cumin ; plus 1 teaspoon
  • 63058 1/2 teaspoons oregano ; dried
  • 10509 3/4 teaspoons cayenne pepper
  • 210195 cups chicken broth ; or stock
  • 1765638 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 42039 tablespoons vegetable oil
  • 10509 3/4 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
