Ingredients (serves 4608)

  • 4608 ounces green chiles ; chopped
  • 2304 cups chicken ; cooked, diced
  • 1152 medium onions ; chopped
  • 1152 cloves garlic ; minced
  • 576 tablespoons cumin ; plus 1 teaspoon
  • 864 teaspoons oregano ; dried
  • 144 teaspoons cayenne pepper
  • 2880 cups chicken broth ; or stock
  • 24192 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 576 tablespoons vegetable oil
  • 144 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
