Often abbreviated as mayo, mayonnaise is a creamy condiment made from oil, vinegar or lemon juice, egg yolk and seasonings. While mayonnaise is most often used as a spread or condiment, it is also a major ingredient in many sauces and dips.
Regular commercial mayonnaise is typically 70% to 80% fat, while low fat versions use cellulose gel, starches, or other ingredients to simulate the texture of regular mayonnaise.
Mayonnaise is often found in recipes that also contain celery, tuna, sour cream, cucumber, cider vinegar and tarragon
