Oil pressed from olives, often used in salad dressing and cooking. Extra virgin olive oil (often abbreviated EVOO), which usually has a superior taste, comes from the first pressing of olives, containing no more than 0.8% acidity and no refined oil. Virgin olive oil has an acidity of less than 2%, no refined oil, and usually has a good taste.
