Pork Souvlaki  

This Greek dish has marinated meat in a lemon and olive oil mixture. Serve with pita bread and a Greek salad.

Ingredients (serves 12)

  • 1 teaspoon oregano ; dried
  • 2 medium onions ; cut into 1 inch pieces
  • 3 cloves garlic ; crushed
  • 1 lemons ; juiced
  • 1/4 cup olive oil
  • 2 green bell pepper ; cut into 1 inch pieces
  • 1/4 cup soy sauce
  • 4 pounds pork ; tenderloin, cut into 1 inch cubes

  • You will also need: grill, skewers


    Combine all ingredients in a large glass bowl. Stir pork to coat. Cover with plastic wrap and refrigerate for 2 ro 3 hours. Preheat grill for meduim-high heat. Thread pork, peppers and onion onto skewers. Grill on an oiled grate for 10 to 15 minutes or until done, turning for even cooking. Makes 12 servings.
