Directions
Combine all the ingrediets with 1 cup water in a pot large enough to cover the chicken. Bring to a boil over high heat; reduce to medium-low and simmer for 30 minutes turning the chicken once or twice. Meanwhile, prepare your broiler. Remove the chicken and dry it gently with a paper towel or clean cloth. Boil the sauce over high heat until it's reduced to about 1 cup. Remove the bay leaves and keep the sauce warm. In the meantime, broil the chicken until brown. A variation of this dish involves adding coconut milk in the beginning stage.
