Ingredients (serves 14)

  • 8 ounces chicken ; cooked, diced boneless skinless breast
  • 1 tablespoon butter
  • 2 tablespoons celery ; diced
  • 1 tablespoon parsley ; chopped
  • 2 tablespoons pineapples ; crushed
  • 3 ounces cream cheese ; softened
  • 2 tablespoons onions ; diced
  • 1 ginger ; crystallized, chopped finely
  • 1/4 teaspoon black pepper
  • paprika ; to taste
  • 1 tablespoon chives ; chopped finely
  • 2 tablespoons cashews ; unsalted, chopped

  • Directions

    1. Melt butter in a skillet over medium heat. Add onion and celery and saute until tender.
    2. In a small bowl, combine cooked onion, celery, chives and cream cheese.
    3. Add chicken, cashews, pineapple and ginger. Garnish with paprika and parsely and serve with crackers.
    Original recipe makes 1 3/4 cups or 14 servings.
