Chicken wings with a Portguese-style rub. Adjust the hotness by changing the amount of cayenne.
Ingredients (serves 7)
Put the mixture into a large, sealable plastic bag.
Add the chicken wings to the bag and rub the paste all over the wings.
Seal the bag and refrigerate for a few hours or overnight.
Remove the wings from the refrigerator, and bring to room temperature, about 30 minutes.
Meanwhile, preheat a broiler.
Lightly grease a baking sheet with olive oil. Arrange wings on the baking sheet.
Place wings 6 inches from the heat and broil until browned, for 10 to 15 minutes. Turn the wings and broil for another 10 minutes, or until it sizzles. Adjust cooking time as appropriate for your oven.
