Make these sugar and cinnamon-topped muffins as minis to get the best flavor.

Ingredients (serves 12)

  • 1/2 cup margarine ; or butter, divided, melted
  • 1 cup sugar
  • 1 tablespoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour

  • Directions

    1. Preheat oven to 375F (190C).
    2. Grease, or spray 24 mini muffin cups with nonstick cooking spray.
    3. In a large bowl, combine nutmeg, 1/4 cup margarine and 1/2 cup of sugar.
    4. Stir in the milk, baking powder and flour until combined.
    5. Fill each muffin cup about half-way.
    6. Bake in the preheated oven for 15 to 20 minutes or until the tops begin to brown.
    7. Meanwhile, put remaing 1/4 cup of melted margarine in a bowl.
    8. Combine, in a separate bowl, the cinnamon and remaining sugar.
    9. Remove muffins from the oven and muffin cups. Dip each in melted margarine, and then roll in the sugar mixture.
    10. Let cool for a bit and serve.
