Ingredients (serves 5)

  • 6 pounds beef ; chopped or cubed
  • 2 quarts beef stock
  • 1/4 pound lard ; or bacon grease
  • 5 tablespoons chili powder ; plus 2 tsp
  • 2 tablespoons oregano ; ground
  • 2 tablespoons salt
  • 2 tablespoons cumin ; ground
  • 1 tablespoon cayenne pepper
  • 4 cloves garlic ; minced
  • 1 cup cornmeal
  • 1/4 cup water ; cold

  • Directions

    1. Melt lard in apan and add the beef. Brown over medium heat.
    2. When the beef is browned, remove from heat and place in a large pot.
    3. Add beef stock and seasonings.  Cover, and simmer for 1 1/2 to 2 hours.
    4. Combine cornmeal and water and stir into the pot. Simmer for an additional 30 minutes.
